I encourage you to modify this recipe by using other herbs such as mint,
oregano, or thyme in place of the dill. Consider also adding some curry
powder, chili powder, or a dash or two of hot sauce or soy sauce and use
the result to replace the high-fat, preservative-laden commercial salad
dressings that you used to buy.
Yogurt Dill Dressing
1/2 cup (125 ml) plain fat-free yogurt
1 scallion, (spring onion), green and white part, finely chopped
2 Tbs (30 ml) finely chopped fresh dill
1 Tbs (15 ml) Dijon mustard
Salt and freshly ground pepper to taste
Combine all the ingredients in a small bowl and whisk to combine. Use
immediately or store covered and refrigerated for up to 3 days.
Makes about 3/4 cup (180 ml).
