            TODAY'S RECIPE

Very similar to the classic Scottish shortbread, these cookies get their
butterscotch flavor from the brown sugar and butter.

Butterscotch Shortbread

1 cup (25 ml) butter
1/2 cup (125 ml) packed brown sugar
1/4 cup (60 ml) sugar
2 1/4 cups (560 ml) all-purpose flour
1 tsp (5 ml) salt

Mix the butter and sugars thoroughly. Stir in the flour and salt. Roll
to a thickness of 1/4 inch (5 mm) and cut into any shape. Place on an
ungreased baking sheet and bake in a preheated 300F (150C) oven for 20
to 25 minutes, until set.
Makes 5 to 7 dozen cookies, depending on size.
