            TODAY'S RECIPE

Tradition has it that one "Uncle Joe" who lived near a frog pond in
Marblehead, Massachusetts was overly fond of rum and always put some in
his cookies. This classic cookie is still enjoyed in New England.

Joe Froggers

2 cups (500 ml) all-purpose flour
1/2 cup (125 ml) honey
1/4 cup (60 ml) melted butter
1/4 cup (60 ml) molasses
1/4 cup (60 ml) dark rum
2 Tbs (30 ml) hot water
1/2 tsp (2 ml) baking soda
1/2 tsp (2 ml) ground ginger
1/4 tsp (1 ml) ground cloves
1/4 tsp (1 ml) nutmeg
1/4 tsp (1 ml) allspice

Combine all the ingredients in a mixing bowl and stir to form a dough.
Wrap in plastic wrap and refrigerate for 1 hour. Pinch off pieces of
dough about the size of walnuts and roll into balls. Flatten to a
thickness of about 1/4 inch (5 mm) and place on a greased baking sheet.
Bake in a preheated 375F (190C) oven for 10 minutes.
Makes about 1 dozen cookies.
