Thanks to Amy Dobek for passing this one along:

One of my daughter's wedding presents was a toaster oven.
Soon after the honeymoon, she and her husband tried it out.
Almost immediately, smoke billowed out of the toaster. "Get
the owner's manual!" my daughter's husband shouted.

"I can't find it anywhere!" cried my daughter a short time later.

"Oops!" came a voice from the kitchen. "Well, the toast is fine,
but the owner's manual's burned to a crisp."

            TODAY'S RECIPE
__________________________________________________

You can use any delicate fish fillets for this dish, but then you
already knew that, didn't you?

Lime-Ginger Red Snapper

1 1/2-2 lbs (675-900 g) red snapper fillets
Salt and freshly ground pepper to taste
1/2 cup (125 ml) lime juice
2 Tbs (30 ml) grated onion
1 tsp (5 ml) powdered ginger
4 Tbs (60 ml) butter, melted
1 lime, thinly sliced

Place the fish fillets in a shallow baking pan and season with
salt and pepper. Mix together the lime juice, onion, and ginger
and pour over the fish. Drizzle with the butter and place the lime
slices on top of the fish. Bake in a preheated 350F (180C) oven
until the fish is firm and cooked through, 15 to 20 minutes.
Serves 4 to 6.
