In spite of its name, this classic New York City soda-fountain thirst
quencher contains neither cream nor eggs. Created by Jewish immigrant
Louis Auster sometime in the early 1890s, the recipe for the drink was
never divulged by its creator who used to brew his secret chocolate
syrup in his back room. The classic beverage calls for seltzer which
has become difficult to find nowadays - use any carbonated water or
even club soda instead.

Classic Egg Cream

1/2 cup (125 ml) ice-cold milk
3 Tbs (45 ml) chocolate syrup
Seltzer or carbonated water, chilled

In a tall glass stir together the milk and chocolate syrup. Fill the
glass with seltzer, stirring gently but constantly to form a white
head of foam. Serves 1.
