I'm pretty sure I have published this on before, but what the heck,
it's funny. Thanks to reader Jeanann Leone for sending it this time.
A man received a parrot for his birthday. The parrot was fully grown,
with a bad attitude and worse vocabulary. Every other word was an
expletive. Those that weren't expletives were, to say the least,
rude. The man tried hard to change the bird's attitude and was
constantly saying polite words, playing soft music, anything he could
think of to try and set a good example.
Nothing worked. He yelled at the bird and the bird yelled back. He
shook the bird and the bird just got more angry and more rude.
Finally, in a moment of desperation, he put the parrot in the freezer.
For a few moments he heard the bird squawk and kick and scream. Then
suddenly there was quiet. Not a sound for half a minute. He was
frightened that he might have hurt the bird and quickly opened the
freezer door. The parrot calmly stepped out onto the man's extended
arm and said, "I believe I may have offended you with my rude language
and actions. I will endeavor at once to correct my behavior. I
really am truly sorry and beg your forgiveness." The man was
astonished at the bird's change in attitude and was about to ask what
had made such a dramatic change when the parrot continued, "May I ask
what the chicken did?

One of the nicer things about being back in the good ol' US of A is
that I can rummage through the recipes that my mother and grandmothers
have collected over the last 75 years. I asked my mother to select a
few for this week's menu, so here are some tried-and-true family
recipes I will call "Mom's Favorites"
Here's a recipe that came from a friend of my mother's over 40 years
ago. This tasty appetizer not only pleases the palate, but the eye as
well.
Smoked Oyster Roll
8 oz (225 g) cream cheese at room temperature
1 Tbs (15 ml) mayonnaise
1 Tbs (15 ml) grated onion
1 tsp (5 ml) Worcestershire sauce
1 clove garlic, pressed through a garlic press
1 can (3.75 oz, 106 g) smoked oysters, drained
and chopped
3 - 4 Tbs (45 - 60 ml) chopped fresh chives
Mix together the cream cheese, mayonnaise, grated onion,
Worcestershire sauce, and the pressed garlic. Spread this onto a
piece of aluminum foil forming a square of about 6 inches (15 cm) and
1/2 inch (1 cm) thick. Chill until firm, 2 to 3 hours. Spread the
chopped oysters over the cheese and roll up jelly roll fashion. Chill
for at least 4 hours or overnight. Roll in chopped chives to coat the
exterior prior to serving. Cut into slices and serve with crackers or
toast points. Serves 4 to 6.
