This dish is unbelievably aromatic, and the flavor is sublime. Try
serving it with just about any chicken or fish dish.
Tanzanian Coconut Rice
3 cups (750 ml) milk
2 cups (500 ml) unsweetened canned coconut milk
2 cups rice
1/2 tsp (2 ml) ground turmeric
1/4 tsp (1 ml) ground cinnamon
1/4 tsp (1 ml) ground cloves
1/4 tsp (1 ml) ground cardamom
Salt to taste
2 Tbs (30 ml) butter
Bring the milk and coconut milk to a boil in a pot over moderate heat.
Stir in the rice, spices, and salt. Cover and simmer over very low heat
for 20 minutes. Stir in the butter. Serves 6 to 8.
