Today we have another true food funny. I'll let the sender introduce
it.

Hi! My name is Donna. While serving recently in the Peace Corps in
Jamaica, I met a woman missionary who told me the following story:

Do you know how you can tell how long a missionary has been in "the
field"? The 1st year, she finds a fly in her water glass, and pours
the whole thing out. The 2nd year, she finds a fly in her water
glass, picks it out, shrugs, and drinks the water. The 3rd year, she
finds a fly in her water glass, smiles, and says "Oh good! Soup!"

I have been saying for years that what the world really needs is more
quick and easy soup recipes. Here I demonstrate that I'm doing my
part to make the world a better place.

Quick Cauliflower Soup

2 Tbs (30 ml) butter
1 small onion, chopped
2 ribs of celery (including leaves), chopped
3 cups (750 ml) canned or fresh chicken stock
1 cup (250 ml) cooked cauliflower, mashed
with a fork
1 cup (250 ml) cream or milk
Salt and pepper to taste
A pinch of coriander

Heat the butter in a saute pan and cook the onion and celery until
tender but not brown. Add the chicken stock and cauliflower and bring
to a boil. Add the cream, salt, pepper, and coriander and bring to a
simmer. Serves 4 to 6.
