This Italian classic spin-off is bound to become a favorite in your
family. Crispy crusted pork chops smothered in tangy Italian Sauce and
creamy melt-in-your mouth mozzarella - no matter how you look at it,
it's Tuesday night terrific or weekend wonderful.
Pork Mozzarella
from Campbell's Kitchen
Prep Time: 10 min.
Bake Time: 25 min.
1 envelope (about 1 ounce) dry onion soup and recipe mix
1/3 cup dry bread crumbs
1/8 teaspoon ground black pepper
1 egg *or* 2 egg whites
2 tablespoons water
6 boneless pork chops, 3/4-inch thick (about 1 1/2 pounds)
1 1/2 cups PregoŽ Traditional Italian Sauce
1 cup shredded mozzarella cheese (about 4 ounces)
1. Crush the soup mix in the envelope with a rolling pin. Stir the soup
mix, bread crumbs and black pepper on a plate.
2. Beat the egg and water in a shallow dish with a fork or whisk. Dip
the pork in the egg mixture. Coat with the crumb mixture. Place the
pork into a 2-quart shallow baking dish.
3. Bake at 400°F. for 20 minutes. Pour the sauce over the pork.
Sprinkle with the cheese.
4. Bake for 5 minutes or until the pork is cooked through and the cheese
is melted.
Makes: 6 servings.
Kitchen Clip
Serve these tasty chops with buttered linguine noodles tossed
with a little grated Parmesan cheese and chopped fresh parsley. Steamed
green beans make a wonderful accompaniment too.
