Chicken Scampi

Chicken breasts are a wonderful vehicle for so many flavors. Here lemon
and garlic join forces in a simple dish that you'll turn to again and again.

Chicken Scampi
from Campbell's Kitchen

Prep Time: 10 min. Cook Time: 20 min.

2 tbsp. butter
6 skinless, boneless chicken breast halves (about 1 1/2 pounds)
1 can (10 3/4 ounces) Campbell's(R) Condensed Cream of Chicken Soup
(Regular or 98% Fat Free)
1/4 cup water
2 tsp. lemon juice
2 cloves garlic, minced or 1/2 teaspoon garlic powder
Hot cooked pasta

Directions:
Heat the butter in a 10-inch skillet over medium-high heat. Add the
chicken and cook for 10 minutes or until well browned on both sides.
Remove the chicken from the skillet.
Stir the soup, water, lemon juice and garlic in the skillet and heat to
a boil. Return the chicken to the skillet. Reduce the heat to low. Cover
and cook for 5 minutes or until the chicken is cooked through. Serve the
chicken and sauce with the pasta. Serves 6.

Kitchen Clip:
Long pasta shapes such as spaghetti and linguine work great with this
dish. Toss the cooked, drained pasta with olive oil, red pepper flakes,
and shredded Parmesan for a quick side dish.
