Italian Sausage & Peppers with Penne
from Campbell's Kitchen
Prep Time: 15 min. Cook Time: 35 min.
2 tbsp. olive oil
1 1/2 lb. sweet or hot Italian pork sausages, cut into 1/2-inch slices
2 medium green and/or red peppers, cut into 2-long strips (about 3 cups)
2 medium onions, thickly sliced (about 1 1/2 cups)
3 cups Prego(R) Traditional Italian Sauce or Prego(R) Organic Tomato &
Basil Italian Sauce
3/4 of a 1-pound package tube-shaped pasta (ziti or penne) (about 4
cups), cooked and drained
grated Parmesan cheese
Directions:
Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add
the sausage in 2 batches and cook until it’s well browned stirring
often. Remove the sausage from the skillet. Pour off any fat.
Reduce the heat to medium and add the remaining oil. Add the peppers and
onions and cook for 5 minutes.
Stir the sauce in the skillet. Heat to a boil. Return the sausage to the
skillet and reduce the heat to low. Cover and cook for 20 minutes or
until the sausage is cooked through and the vegetables are tender. Serve
over the pasta and sprinkle with the cheese. Serves 6.
Kitchen Clip:
Serve with Pepperidge Farm(R) Garlic Bread and store-bought brownies for
dessert.
