Roasted Red Pepper, Baby Spinach & Goat Cheese Sandwiches

2 cups fresh baby spinach leaves
3 tbsp. raspberry fat-free vinaigrette OR your favorite fat-free vinaigrette
4 slices Pepperidge Farm(R) Natural Whole Grain German Dark Wheat Bread
2 roasted red peppers, cut into strips
1 oz. goat cheese OR blue cheese, crumbled
2 tbsp. thinly-sliced green onions
Directions:
TOSS spinach and vinaigrette in bowl. Arrange spinach mixture on 2 slices
bread.
TOP with red peppers, cheese, green onions and remaining bread. Serves 2.
