Fresh flavors tonight will make this supper dish disappear in a flash.

Cod Veracruz
from Campbell's Kitchen

Prep/Cook Time: 25 min.

1 lb. fresh OR thawed frozen cod OR haddock fillets
1 can (10 3/4 oz.) Campbell's(R) Tomato Soup
1 can (10 1/2 oz.) Campbell's(R) Chicken Broth
1/3 cup Pace(R) Chunky Salsa OR Pace(R) Picante Sauce
1 tbsp. lime juice
2 tsp. chopped fresh cilantro leaves
1 tsp. dried oregano leaves, crushed
1/4 tsp. garlic powder OR 1 clove garlic, minced
4 cups hot cooked rice

Directions:
PLACE fish in 2-qt. shallow baking dish.
MIX soup, broth, salsa, lime juice, cilantro, oregano and garlic
powder. Pour over fish.
BAKE at 400°F. for 20 min. or until fish is done. Serve over rice.
Serves 4.

Kitchen Clip:
Cilantro, like other green herbs, will keep for more than a week if
the stems are kept in water in the refrigerator. Store the herb
upright in a glass or jar of water, and cover the tops loosely with a
plastic bag.
