Latkes with Sour Cream-Mushroom Sauce
from Campbell's Kitchen
Prep Time: 20 min. - Cook Time: 20 min.
1 lb. baking potatoes, shredded (3 cups)
1/2 cup plus 2 tbsp. green onions
1/4 cup all-purpose flour
1 can (10 3/4 oz.) Campbell's(R) Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup
Vegetable oil
1 cup sour cream
Directions:
PLACE shredded potatoes in colander. Rinse with cold water. Blot dry with paper towels.
MIX potatoes, 1/2 cup onions, flour and 1/2 cup soup.
HEAT oil in nonstick skillet. For each latke, place 2 tbsp. potato mixture in skillet, flattening into a 3" round with spoon. Cook latkes, 5 or 6 at a time, until browned and crisp on both sides. Drain on paper towels.
MIX sour cream with remaining soup and onions. Serve with latkes. Makes 16.
