2-Step Italian Style Chicken
from Campbell's Kitchen
Prep/Cook Time: 20 min.
1 tbsp. vegetable oil
4 boneless chicken breast halves
1 can (10 3/4 oz.) Campbell's(R) Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup
1/3 cup water
1/2 cup chopped Italian plum tomato
1 tbsp. chopped fresh parsley
1 tbsp. chopped fresh basil leaves OR 1 tsp. dried basil leaves, crushed
1 tbsp. butter
Directions:
HEAT oil in skillet. Add chicken and cook until browned.
ADD soup, water, tomato, parsley and basil. Heat to a boil. Cover and cook over low heat 5 min. or until done. Stir in butter just before serving. Serves 4.
Kitchen Clip:
Replace the water and chopped Italian plum tomatoes with 2/3 cup of canned diced tomato, with juice, if desired.
