Tomato-Feta Frittata
from Campbell's Kitchen
Prep Time: 15 min. - Cook Time: 40 min.
7 eggs
1/2 cup water
1 cup cooked rice
3/4 cup crumbled feta cheese
1/2 cup shredded Cheddar cheese
1/2 cup Pace(R) Picante Sauce
2 tbsp. chopped fresh cilantro
1/2 tsp. dried oregano leaves, crushed
3 Italian plum tomatoes, sliced
Directions:
PREHEAT oven to 400°F. Heat greased oven-safe skillet in oven for about 5 min.
BEAT eggs and water. Add rice, feta cheese, Cheddar cheese, picante sauce, cilantro and oregano. Pour into skillet. Top with tomatoes.
BAKE for 40 min. or until knife inserted in center comes out clean. Serves 6.
Kitchen Clip:
Heat a loaf of French bread or Italian rolls on the bottom rack of the oven during the last 5 minutes of baking.
