It's Friday--reason enough to celebrate with a tasty, family-pleasing
dinner that's on the table in minutes! Count on Campbell's(R) for
delicious meal ideas, every day!

Chicken & Vegetable Stir-Fry
from Campbell's Kitchen

Prep/Cook Time: 25 min.

2 tbsp. cornstarch
1 can (14 oz.) Swanson(R) Vegetable Broth
1 tbsp. soy sauce
2 tbsp. vegetable oil
1 lb. boneless chicken breasts, cut into strips
5 cups cut-up vegetables *
1/4 tsp. ground ginger
1/8 tsp. garlic powder OR 1 clove garlic, minced
4 cups hot cooked rice

Directions:
  MIX cornstarch, broth and soy.
  HEAT half the oil in skillet. Add chicken and stir-fry until browned.
Remove chicken.
  ADD remaining oil. Add vegetables, ginger and garlic and stir-fry
until tender-crisp.
  STIR cornstarch mixture and add. Cook and stir until mixture boils and
thickens. Return chicken to skillet and heat through. Serve over rice.
Serves 4.
*Use a combination of broccoli flowerets, sliced mushrooms, sliced
carrots, sliced celery, red or green pepper strips and sliced green onions.

Kitchen Clip:
To shave minutes off preparation, choose your favorite vegetables in the
produce section that are already sliced, chopped or diced. Choose a
variety of shapes, colors and textures for the most interesting
combination. Garnish this colorful stir-fry with the chopped tops of
green onions or some toasted sesame seed. Complete the meal with fresh
fruit--sliced oranges or berries--and cookies.
