Hearty Tomato Rice Soup
from Campbell's Kitchen
Prep/Cook Time: 25 min.
1 small zucchini, coarsely chopped
1/2 tsp. dried basil leaves, crushed
1/8 tsp. garlic powder OR 1 clove garlic, minced
1 can Campbell's(R) Healthy Request(R) Tomato Soup
1 1/3 cups water
1 tsp. lemon juice
1 1/2 cups cooked rice, cooked without butter or salt
2 tbsp. grated Parmesan cheese
Directions:
SPRAY saucepan with vegetable cooking spray. Heat over medium heat 1
min. Add zucchini, basil and garlic and cook until tender-crisp.
ADD soup, water, lemon juice and rice. Heat through. Sprinkle with
cheese. Serves 4.
Kitchen Clip:
When cooking rice for one meal, cook double the amount needed and keep
in a sealed bag in the refrigerator for up to four days. Stir into soups
or stews, reheat to serve as a bed for a simmered meat dish, or toss
with diced vegetables and salad dressing for an unusual salad. Or turn
leftover plain rice into dessert by simmering with light cream, raisins
and cinnamon.
