Though it's only minutes from kitchen to table, supper is satisfying and
tastes like you spent the afternoon cooking. Satisfy both the family and
the busy cook with tasty ideas from Campbell's(R)!
Chicken Stir-Fry
from Campbell's Kitchen
Prep/Cook Time: 25 min.
1 tbsp. vegetable oil
1 lb. boneless chicken breasts, cut into strips
1 can (19 oz.) Campbell's(R) Chunky Vegetable Soup
1 cup frozen Oriental OR other mixed vegetable combination, thawed
2 tsp. cornstarch
2 tsp. soy sauce
2 pkg. (3 oz. each ) oriental flavor ramen noodle soup
Directions:
HEAT oil in skillet. Add chicken and stir-fry until browned. Remove
chicken.
ADD vegetable soup, vegetables, soy and cornstarch. Return chicken to
skillet. Cook and stir until mixture boils and thickens.
PREPARE ramen noodle soup according to pkg. directions. Drain off most
of liquid. Serve chicken mixture over noodles. Serves 4.
To quickly thaw frozen vegetables, microwave on HIGH 2 min. or until thawed.
Kitchen Clip:
Toss coleslaw mix with mandarin oranges and a vinaigrette dressing. Pass
fortune cookies for dessert.
