Festive flavors bring the family to the supper table, so check out
tonight's meal idea from the Campbell's(R) Kitchen.

Southwest Chicken & Vegetables
from Campbell's Kitchen

Prep Time: 15 min. - Cook Time: 20 min.

4 boneless chicken breast halves
1 can Campbell's(R) Healthy Request(R) Cream of Chicken & Broccoli Soup
1/2 cup milk
2 tbsp. lime juice OR lemon juice
1 tbsp. chopped fresh cilantro OR parsley
1/8 tsp. pepper
3 cups cut-up vegetables *
4 cups hot cooked rice, cooked without butter or salt.

Directions:
  SPRAY skillet with vegetable cooking spray and heat over medium-high
heat 1 min. Add chicken and cook until browned. Remove chicken.
  ADD soup, milk, lime juice, cilantro, pepper and vegetables. Heat to a
boil. Return chicken to skillet. Cover and cook over low heat 5 min. or
until done. Serve with rice. Serve with additional lime juice if
desired. Serves 4.
*Use a combination of broccoli flowerets, whole kernel corn and green or
red pepper strips.

Kitchen Clip:
For vegetables in this dish, try for a variety of colors, shapes and
textures. Try corn, red pepper strips and green beans; or drained
hominy, broccoli flowerets and coarsely chopped red onion. If desired,
serve some warmed corn or flour tortillas with this skillet supper, and
a salad of sliced oranges garnished with cilantro.
