Supper's ready in just minutes, but it tastes like "all day cooking."
The cook in a hurry who wants to please the family counts on
Campbell's(R) Kitchen.

Vegetable Rice Pilaf
from Campbell's Kitchen

Prep/Cook Time: 25 min.

1/4 cup chopped green OR red pepper
2 cloves garlic, minced
1/2 tsp. dried basil leaves, crushed
1/8 tsp. black pepper
1 cup uncooked regular long-grain white rice
1 can Campbell's(R) Healthy Request(R) Chicken Broth
3/4 cup frozen mixed vegetables

Directions:
  SPRAY skillet with vegetable cooking spray and heat 1 min. Add green
pepper, garlic, basil, black pepper and rice. Cook and stir until rice
is browned and green pepper is tender-crisp.
  STIR in broth. Heat to a boil. Cover and cook over low heat 10 min.
  STIR in vegetables. Cover and cook 10 min. or until rice is done and
most of liquid is absorbed. Serves 4.

Kitchen Clip:
This fragrant rice and vegetable dish is great with a green salad tossed
with a vinaigrette dressing and a warm loaf of French bread. If
tonight's not a "meatless" night, add some broiled shrimp or meatloaf
from the deli.
