Irresistible is what your family will call this satisfying supper. You
can call yourself a genius for having Campbell's(R) on hand for quick,
family-pleasing meals.
Asparagus-Vegetable Potato Topper
from Campbell's Kitchen
Prep/Cook Time: 20 min.
1 tbsp. vegetable oil
3/4 lb. asparagus, trimmed, cut into 1" pieces OR 1 pkg. (about 9 oz.)
frozen asparagus cuts
2 medium carrots, sliced
1 cup sliced mushrooms
1/4 tsp. dried basil leaves, crushed
1 can Campbell's(R) Cream of Asparagus Soup
2 tbsp. milk
6 hot baked potatoes, split
Directions:
HEAT oil in skillet. Add asparagus, carrots, mushrooms and basil and
cook until tender.
ADD soup and milk and heat through.
SPOON soup mixture over potatoes. Serves 6.
Kitchen Clip:
To bake potatoes in the microwave, pierce each potato in several places
with a fork or paring knife. Place 6 potatoes in a circle (as spokes in
a wheel) in microwave. Microwave on high power (100%) for 13-15 minutes;
let stand 5 minutes in the microwave before splitting.
