A delicious Campbell's(R) Soup duo--Tomato Soup and Condensed Chicken
Broth--team with traditional Mexican flavors for a delectable fish
entree ready in minutes.
Cod Vera Cruz
from Campbell's Kitchen
Prep/Cook Time 25 min.
1 lb. fresh OR frozen cod OR haddock fillets, thawed
1 can (10 3/4 oz.) Campbell's(R) Tomato Soup
1 can Campbell's(R) Condensed Chicken Broth
1/3 cup Pace(R) Chunky Salsa OR Picante Sauce
1 tbsp. lime juice
2 tsp. chopped fresh cilantro
1 tsp. dried oregano leaves, crushed
1/8 tsp. garlic powder OR 1 clove garlic, minced
4 cups hot cooked rice
Directions:
PLACE fish in 2-qt. shallow baking dish.
MIX soup, broth, salsa, lime juice, cilantro, oregano and garlic. Pour
over fish.
BAKE at 400 degrees F. for 20 min. or until done. Serve over rice.

or Mexican parsley, is used widely in Mexican cooking, often combining
with chilies to flavor salsas and guacamoles. Cilantro loses its flavor
when dried, so it is usually used fresh and best stored by refrigerating
in water, covered with a plastic bag.
