Kitchen Clip:
Traditional jambalaya is perhaps the most versatile main dish of Cajun
or Creole cuisine. It may be made with any combination of beef, pork,
chicken, duck, sausage, shrimp, oysters or crayfish, plus green pepper,
tomatoes, celery, onions and cayenne pepper--truly a "mixing of things"
as its name is said to translate to.
