Basil, a leafy member of the mint family, is available in more than 60
varieties. The most common is
green or sweet basil with large, bright green leaves. You'll find its
mild, licorice-type flavor
enhancing both hot and cold dishes in a variety of cuisines,
particularly Mediterranean sauces and
soups and Southeast Asian stir-fries, curries and salads.
