Kitchen Clip:
Some claim this classic Creole dish derives its name from 'jambon'--the
French word for ham; others say it
translates to 'mixing of things.' Either way it means a mixture of a
variety of ingredients--usually beef, pork,
sausage, shrimp and crayfish for meats, and green pepper, celery,
tomatoes and onion for vegetables.
