Recipe of the Day:
Two Campbell's Soups, salsa, lime and spices, create a flavor sensation
for fish--and a quick and easy midweek meal for
your family!
Campbell?s Cod a la Vera Cruz
Prep/Cook Time: 25 minutes
1 lb. fresh or frozen cod or haddock fillets, thawed
1 can (10 3/4 oz.) Campbell's Tomato Soup
1 can Campbell's Condensed Chicken Broth
1/3 cup Pace Chunky Salsa or Picante Sauce
1 tbsp. lime juice
2 tsp. chopped fresh cilantro
1 tsp. dried oregano leaves, crushed
1/8 tsp. garlic powder or 1 clove garlic, minced
4 cups hot cooked rice
PLACE fish in 2-qt. shallow baking dish.
MIX soup, broth, salsa, lime juice, cilantro, oregano and garlic. Pour
over fish
BAKE at 400°F. for 20 min. or until done. Serve over rice. Serves 4.

Kitchen Clip:
Fillets are sides of the fish cut lengthwise away from the ribs. If
using fresh fillets, look for those with firm
texture, moist appearance and fresh odor.
