Kitchen Clip:
Welsh Rarebit as a cheese and bread dish gets its name literally from
the words "rare" (meaning
lightly cooked) and "bit" (a small portion). The "lightly cooked"
description, however, refers
only to the cheese sauce traditionally served over toast. In this
recipe, and whenever you cook
ground meat, always be sure to cook it thoroughly to a minimum internal
temperature of 160°F.
