Campbell's Tomato Soup creates a savory stir-fry in mere minutes -- just
right for a quick
mid-week meal!
Campbell's Tomato Chicken Stir-Fry
Prep Time: 10 minutes
Cook Time: 20 minutes
2 tbsp. vegetable oil
1 lb. boneless chicken breasts, cut into strips
3 cups cut-up vegetables*
1/4 tsp. garlic powder or 2 cloves garlic, minced
1 can (10 3/4 oz.) Campbell's Tomato Soup
2 tbsp. soy sauce
1 tsp. vinegar
4 cups hot cooked rice
HEAT 1 tbsp. oil in skillet. Add chicken and stir-fry until browned.
Remove chicken.
HEAT remaining oil. Add vegetables and garlic and stir-fry until
tender-crisp.
ADD soup, soy and vinegar. Heat to a boil. Return chicken to pan and
heat through. Serve over
rice. Serves 4.
*Use a combination of broccoli flowerets, carrots cut in matchstick-thin
strips and red or green
pepper strips.
VARIATION: Substitute 2 packages (3 oz. each) Campbell's or Ramen Pride
chicken flavor ramen
noodle soup for rice. Prepare noodles according to package directions.
Add seasoning packets;
drain off most of liquid. Serve chicken mixture over noodles.
