Here's a quick dessert that's especially good with a scoop of ice cream.
Quick Apple Crisp
For the apples:
2 lbs (900 g) tart green apples, peeled, cored, and sliced
1/2 cup (125 ml) raisins
1/4 cup (60 ml) apple juice
1/4 cup (60 ml) firmly packed brown sugar
1 tsp (5 ml) ground cinnamon
1/4 tsp (1 ml) ground cloves
For the topping:
3/4 cup (180 ml) all-purpose flour
1/3 cup (80 ml) firmly packed brown sugar
1/2 tsp (2 ml) baking powder
1/4 lb (110 g) butter, cut into small pieces
Combine the apple ingredients in a large saucepan and cook,
stirring occasionally, until apples are tender, 10 to 15 minutes.
Place the apples in a 9-inch (22 cm) pie dish. Combine the
topping ingredients in a small bowl and rub together with your
fingers until the mixture begins to form small clumps. Sprinkle
the topping over the apples and bake in a preheated 375F
(190C) oven for 30 minutes. Serve warm, chilled, or at room temperature.
Serves 4 to 6.
