TODAY'S RECIPE

As we have discussed several times in this ezine, Graham
crackers are thin, crisp cookies made from whole wheat and
usually sweetened with honey. Any similar cookie such as
digestive biscuits, biscotti, or amaretti may be substituted in this
recipe.
Graham Cracker Cookies
1 cup (250 ml) confectioner's (powdered) sugar
3 egg whites, stiffly beaten
1 cup (250 ml) Graham cracker crumbs
1/2 cup (125 ml) chopped pecans, walnuts, or nuts of your choice
1 tsp (5 ml) vanilla extract
6 oz (170 g) semi-sweet chocolate, melted
Stir the sugar into the stiffly beaten egg whites gradually. Fold
in the Graham cracker crumbs, chopped nuts, and vanilla. Fold
in the melted chocolate and drop by teaspoonfuls onto a lightly
greased baking sheet. Bake in a preheated 325F (165C) oven for 12 minutes.
Makes about 3 dozen.
