Here's a recipe from my mother's collection. They come out
looking exactly like those expensive cookies you buy at the bakery.

Ring Around the Cookies

1 cup (250 ml) butter
1 cup (250 ml) sifted confectioner's (powdered) sugar
2 tsp (10 ml) vanilla extract
1 1/4 cups (310 ml) all-purpose flour
1 cup (250 ml) rolled oats
1/2 tsp (2 ml) salt
About 1 cup chocolate sprinkles, grated chocolate,
shredded coconut, chopped nuts, or chopped candied fruit

Beat the butter, sugar, and vanilla until thoroughly combined.
Beat in the flour, oats, and salt. Shape into 2 logs about 1 1/2
inches (4 cm) in diameter and roll in chocolate sprinkles (or
desired coating) to coat the surface. Wrap tightly in plastic
wrap or wax paper and refrigerate at least 4 hours or overnight.
Cut into 1/4-inch (5 mm) slices and place on a lightly greased
baking sheet. Bake in a preheated 375F (190C) oven for 10 to 12 minutes.
Makes about 4 dozen.
