This French toast is so sweet and tasty that it doesn't need any
topping, but a little honey would be wonderful if you insist.

Banana-Stuffed French Toast

1 large loaf day-old French bread, cut into 1-inch (3 cm) slices
2 bananas, peeled and sliced
1/4 cup (60 ml) chopped walnuts
1/4 cup (60 ml) packed brown sugar
4 eggs
3/4 cup (180 ml) milk
1 tsp (5 ml) vanilla extract
Butter or cooking spray for frying

Cut each slice of bread by slicing it almost all the way through,
leaving the slices attached at one edge to make a sort of pocket. Layer
the slices of banana, chopped walnuts, and brown sugar inside each
pocket. Whisk together the eggs, milk, and vanilla in a shallow bowl or
pie plate. Dip each slice of bread in the mixture to coat them on both
sides and fry on a greased griddle or skillet over moderate heat until golden brown on both sides.
Serves 4 to 6.
