Longtime readers know that I'm a stickler for fresh ingredients, and
they also know that I am happy to make an exception to that rule in the
case of canned beans. They're cheap, convenient, nutritious, and a real
time-saver, and you will always find several cans of various beans in my
pantry. Canned lima beans make this one of the quickest and easiest
soups you'll find anywhere.

Lima Bean Soup

6 cups (1.5 L) vegetable or chicken stock
1 onion, chopped
2 15-oz cans (425 g each) lima beans, drained and rinsed
1-3 cloves garlic, crushed in a garlic press
1/2 lb (225 g) cooked sausage such as kielbasa, bratwurst, or frankfurters, sliced
Salt and freshly ground pepper to taste

Combine all the ingredients in a pot and bring to a boil over high heat.
Reduce the heat and simmer until the onion is tender and the sausage is
heated through, about 5 minutes.
Serves 4 to 6.
