A turkey farmer was always experimenting with breeding to perfect a
better turkey. His family was fond of the leg portion for dinner and
there were never enough legs for everyone. After many frustrating
attempts, the farmer was relating the results of his efforts to his
friends at the general store get together. "Well I finally did it! I
bred a turkey that has six legs!" They all asked the farmer how it
tasted. "I don't know" said the farmer. "I never could catch the darn
thing!"

TODAY'S RECIPE

I know I'm in the minority, but Brussels sprouts are probably my
favorite member of the Brassica genus. Here we give them a classic
French treatment.
Brussels Sprouts in Brown Butter
1 lb (450 g) Brussels sprouts, trimmed
3 Tbs (45 ml) butter
1/4 cup (60 ml) chopped hazelnuts, almonds, or walnuts
Salt and freshly ground pepper to taste
Steam the Brussels sprouts until tender, about 20 minutes. Melt the
butter in a large skillet over moderate heat. Add the chopped nuts and
cook until the butter begins to brown. Add the Brussels sprouts, tossing
to coat with the butter, and season with salt and pepper.
Serves 4 to 6.
