This recipe is as easy as they come, so keep the ingredients on hand for
the next time you just don't feel like cooking dinner.

Chutney Chicken

4 to 6 boneless, skinless chicken breast halves
1 9 oz (250 g) jar mango chutney
1 scallion (spring onion), green and white parts, thinly sliced

Place the chicken breast halves in a baking dish just big enough to hold
them without touching each other. Spoon the chutney on top of the
chicken breasts and bake in a preheated 375F (190C) for 20 minutes.
Sprinkle with the sliced scallion just before serving.
Serves 4 to 6.
