I would never recommend canned fruits over fresh, but a few cans
of fruit in the pantry sure do come in handy when fresh fruits aren't
in season. Be sure to buy fruits in light syrup whenever possible.
Fruit Casserole
1 15-oz (425 g) can applesauce
1 15-oz (425 g) can apricot halves, drained
1 15-oz (425 g) can pear halves, drained
1 15-oz (425 g) can sliced peaches, drained
1 15-oz (425 g) can white cherries, drained and pitted
1 15-oz (425 g) can pineapple chunks, drained
1/2 cup (125 ml) brown sugar
Cinnamon to taste
Freshly grated nutmeg to taste
1 cup (250 ml) coarsely chopped walnuts, pecans, or nuts of your choice
Layer the fruits in a lightly greased 3-quart (3 L) baking dish,
sprinkling each layer with brown sugar, cinnamon, and nutmeg.
Top with the chopped nuts and bake in a preheated 300F (150C)
oven until heated through, 20 to 30 minutes. Serves 8 to 12.

This old-fashioned recipe isn't a pudding in the modern American
sense of the word. The cake-like topping puts it more in the apple
crisp or cobbler category, but it's not really like them either. Call
it what you will, I'm sure you'll enjoy it.
Apple Pudding
4-6 cooking apples, peeled, cored, and sliced
1/4 cup (60 ml) sugar
1/2 tsp (2 ml) ground cinnamon
1/2 tsp (2 ml) freshly grated nutmeg
1/4 cup (60 ml) hot water
For the batter:
1 egg
1/2 cup (125 ml) sugar
2 Tbs (30 ml) vegetable oil
1 cup (250 ml) all-purpose flour sifted with
1 tsp (5 ml) baking powder and
A pinch of salt
Place the apple slices in a lightly greased baking dish. Sprinkle with
the sugar and spices and add the hot water. Beat the egg and sugar
together until light and fluffy. Beat in the oil. Fold in the flour
mixture just enough to incorporate - there should be a few small lumps.
Spread the batter on the apples and bake in a preheated 375F (190C) oven
for 25 minutes. Reduce the heat to 350F (180C) and bake until a
toothpick inserted in the center comes out clean, 10 to 15 minutes more.
Serves 4 to 6.
