This cool summer soup is as pleasing to the eye as to the palate.

Cold Mango Soup

3 cups (750 ml) chopped mango flesh
2 Tbs (30 ml) lemon juice
1/2 cup (125 ml) dry white wine or water
1/2 tsp (2 ml) ground ginger
1/2 tsp (2 ml) ground cinnamon
1 cup (250 ml) half-and-half, heavy cream, or milk
1 cup (250 ml) fresh or frozen raspberries
2 Tbs (30 ml) rum (optional)

Combine the mango, lemon juice, and wine in a saucepan and bring
to a boil over moderate heat. Reduce the heat and simmer uncovered
until the mango is tender, about 5 minutes. Let cool and combine with
the spices in an electric blender or food processor. Puree until smooth
and stir in the half-and-half. Chill until ready to serve. Puree the
raspberries and optional rum and strain to remove the seeds. Serve
the soup cold garnished with a drizzle of the raspberry puree. Serves
4 to 6.
