past couple of weeks may be over, but summer is far from over and
we all need a respite from the sizzling summer temperatures. Here
is a collection of recipes with a tropical flavor to help cope with the
heat - the drinks with little umbrellas are up to you.

This simple yet elegant appetizer is a tropical twist on a classic
Italian dish.

Prosciutto with Papaya

1 large ripe papaya
8-12 paper-thin slices of prosciutto ham
Freshly ground pepper to taste
Lime or lemon wedges for garnish

Cut the papaya lengthwise into 4 to 6 segments. Scoop out and
discard the seeds. Cut the skin from the flesh and discard the skin.
Wrap each slice of papaya with 2 or 3 slices of prosciutto. Add a
grinding of pepper and serve with lime wedges. Serves 4 to 6.
