I feel like my body has gotten totally out of shape, so I got my
doctor's permission to join a fitness club so I could start
exercising. I decided to take an aerobics class for seniors. I bent,
I twisted, I gyrated, I jumped up, I jumped down, and I perspired for
more than an hour. By the time I got my sweats on, the class was
over.

This recipe was originally sent in by reader Barbara Horton in
January, 2000. Judy of Indian Rocks Beach, Florida chose it as one of
the Best of World Wide Recipes and sent along the following notes:
Be careful with nuts - hot sugar makes a nasty burn. All of the
dressing will probably not be necessary. I used 1 1/2 tablespoons red
wine vinegar and 1/2 tablespoon balsamic vinegar and a little less
sugar in the dressing. Rinsing and draining (and drying) the oranges
helps to eliminate any "canned" taste. This is a fabulous salad. I
did write to thank the author, but have since lost her email address.
Here is the recipe as Barbara Horton submitted it, along with her
introduction:
Dear People,
We are transplanted retired "nutmeggers" from Connecticut now living
on the beautiful west coast of Florida. With luscious strawberries
now coming in fresh from Plant City Florida, the strawberry capitol of
the world, try this great recipe which I first heard on a Tampa CBS
station about 2 years ago. If you like strawberries, and walnuts,
you'll be happy with this, which makes a tasty light lunch.
Sensational Strawberry Salad, for 2
Lettuce, washed and pulled
1 cup hulled strawberries, cut in half
1 small can mandarin oranges
Arrange cut lettuce on salad dishes; layer strawberries over lettuce.
Add oranges. Sprinkle with caramelized nuts. Add dressing, toss, and
enjoy.
Caramelized nuts
2 Tbs sugar
1/2 - 3/4 cup shelled walnuts, broken into pieces
In saucepan, over medium heat, combine walnuts, sprinkled with sugar.
Cook (and stir) until sugar caramelizes to coat the nuts. Remove from
heat and spread (and separate) nuts on wax paper to cool.
Dressing
1/4 cup vegetable oil
2 Tbs vinegar
2 Tbs sugar
1/4 tsp salt
dash of pepper
4 or 5 drops of hot sauce - more or less, to taste
Place all ingredients in container, cover with lid, and shake.
