             FOOD FUNNY
__________________________________________________

Thanks to Jean Turner for sending us this classic food funny:

A man walked into a bar and ordered martini after martini. Each time
the bartender set down a fresh martini, the man removed the olive and
placed it in a jar. When the jar was filled with olives and all the
drinks consumed, he stood to leave.

"Excuse me," said a customer who was puzzled over what he had
observed, "what was that all about?"

"Nothing," said the man, "my wife just sent me out for a jar of
olives."

             TODAY'S RECIPE
__________________________________________________

In yesterday's recipe for Stuffed Portobello Caps I said, "Pain the
portobello caps with half the oil" when I should have said, "Paint the
portobello caps with half the oil." Sorry about the confusion.

"Vegetables from Amaranth to Zucchini" doesn't contain any recipes for
desserts, which is all right by me - I'm sure the world has all the
recipes it needs for zucchini bread and carrot cake. Instead, I offer
up this "extra" recipe, a delicious and unexpected combination of
fresh, raw ingredients that can be used either as a condiment or side
dish and goes great with seafood, poultry, and roast pork.

Onion, Avocado, and Papaya Salsa

All recipes this week are adapted from "Vegetables from Amaranth to
Zucchini" by Elizabeth Schneider, William Morrow, 2001 and is
available from Amazon.com at

http://www.worldwiderecipes.com/cookbooks.htm

1 medium sweet onion, chopped
1 ripe papaya (about 3/4 lb, 350 g), peeled, seeded, and diced
1 large avocado (smooth-skinned variety is preferable), pitted,
peeled, and diced
The zest of 1 lime, grated
1/4 cup (60 ml) fresh lime juice
1/4 cup (60 ml) rice vinegar
1/4 cup (60 ml) chopped cilantro (coriander leaves)
1 tsp (5 ml) sugar
1/2 tsp (2 ml) dried red pepper flakes, or to taste
Salt and freshly ground pepper to taste

Combine all ingredients in a bowl and toss gently. If preparing in
advance, add the avocado at the last minute. Makes about 3 cups
(750 ml).
