             TODAY'S RECIPE

This delicate soup has been a favorite of my mother's for so long that
she can't remember where she got the recipe. It's quick, easy, and
absolutely delicious.

Tomato Consomme

4 cups (1 L) chicken stock
2 cups (500 ml) coarsely chopped and drained
canned Italian plum tomatoes
1 bay (laurel) leaf
1/4 cup (60 ml) dry vermouth
1 Tbs (15 ml) sugar
Salt and freshly ground pepper to taste
Hot sauce to taste

Combine the chicken stock, tomatoes, and bay leaf in a saucepan and
bring to a simmer over moderate heat. Simmer covered for 15 minutes.
Discard the bay leaf and press the contents of the saucepan through a
fine sieve. Discard the tomato solids and add the remaining ingredients,
stirring to combine. Serve hot or cold. Serves 4 to 6.
