at my mother-in-law's birthday dinner."
My 6-year-old daughter Julia was eating her food at dinner with her
fingers so my sister-in-law Michelle told her, "Julia, stop eating
with your fingers and use your utensils!" Julia asked what utensils
were and Michelle told her it was her fork. Julia was frustrated and
said, "I didn't know what you were saying! I don't speak Spanish!"

TODAY'S RECIPE

This sandwich is similar to many found in Florida, New Orleans, and
other parts of the Gulf coast. If you have ever sampled them while
lazing on the beach or strolling the French Quarter, you will probably
remember them as the "ultimate" shrimp sandwich.
The Ultimate Shrimp Sandwich
3/4 lb (340 g) cooked shrimp, coarsely chopped
1/4 cup (60 ml) chopped green pepper (capsicum)
1/4 cup (60 ml) chopped celery
1/4 cup (60 ml) chopped cucumber
1/4 cup (60 ml) diced tomatoes
1/4 cup (60 ml) finely chopped scallion (spring onion),
green and white parts
1/4 cup (60 ml) mayonnaise
Salt and freshly ground pepper to taste
Hot sauce to taste (optional)
6 hot dog buns (frankfurter rolls)
2 Tbs (30 ml) butter
1 cup (250 ml) shredded lettuce
Combine the shrimp, vegetables, mayonnaise, salt, pepper, and optional
hot sauce in a bowl and toss to combine thoroughly. Spread the buns
with butter and divide the lettuce among them. Top with the shrimp
mixture. Serves 6.
