Today's food funny is so funny that it took two people to send it in.

The well known gelatin dessert that comes in a small box is fine if
you're feeding kids, but our "Elegant Dinner for Two" deserves
something with more subtlety and flavor. After you try this recipe
you may never go back to the boxed stuff again.
Pineapple Gelatin
1 Tbs (1 packet, 15 ml) gelatin
1/4 cup (60 ml) cold water
1 cup (250 ml) pineapple juice
3/4 cup (180 ml) water
1/4 cup (60 ml) sugar
1/2 cup (125 ml) canned* crushed pineapple, drained
Whipped cream (optional)
* Note that fresh pineapple must be boiled before it can be added to
this or any gelatin recipe.
Soak the gelatin in the 1/4 cup (60 ml) cold water for 5 minutes.
Meanwhile, bring the pineapple juice and the 3/4 cup (180 ml) water to
a boil in a small saucepan over moderate heat. Remove from the heat
and stir in the gelatin mixture and the sugar, making sure that the
gelatin and sugar are thoroughly dissolved. Pour into a mold and
refrigerate until partially set. Fold in the crushed pineapple.
Refrigerate for 4 hours, or until set. Top with whipped cream if
desired. Serves 2.
