Today's food funny comes from Cindy, one of my favorite readers and
correspondents.
A doctor started having an affair with his nurse and shortly after
this started, she announced that she had become pregnant. Not wanting
his wife to find out, he gave her a large amount of money and asked
her to go out of the country, to Germany, to wait out the pregnancy
and have the baby there. "But how will you know when our baby is
born?" she asked. "Well"," he said, "after you've had the baby, just
send me a postcard and write 'sauerkraut' on the back." Not knowing
what else to do, she took the money and went to Germany.
Six months later the doctor's wife called him at his office, "Dear,
you received a very strange postcard in the mail today", she
explained. "I don't understand what it means." The doctor replied
"Just wait until I get home and I'll read it".
Later that evening the doctor came home and read his postcard which
said:
"SAUERKRAUT, SAUERKRAUT, SAUERKRAUT- Two with wieners, one without!"
I have to confess that today's "Pre-Holiday Diet" menu isn't really
the best diet recipe I could have come up with, but here's how I
justify it: rather than having your usual diet breakfast and your
usual diet lunch, have this instead. One meal in place of two.
That's got to help reduce the old waistline. If not, you have my
standard money-back guarantee: I guarantee you'll never get a dime out
of me.
Breakfast Burrito
4 medium potatoes, cut into 1/2 in (1 cm) dice
1 Tbs (15 ml) vegetable oil
1/4 cup (60 ml) chopped red bell pepper
1/2 cup (125 ml) thinly sliced scallions
(green onions, spring onions)
6 eggs
2 Tbs (30 ml) water
1 to 2 tsp (5 to 10 ml) Tabasco or other
hot pepper sauce, or to taste
1+1/2 cups (375 ml) shredded Cheddar cheese,
Monterey jack cheese, or combination of the two
Salt and freshly ground black pepper to taste
4 10-inch (25 cm) flour tortillas (burrito size)
Boil the potatoes in enough water to cover for about 10 minutes, until
just tender. Drain. Heat the vegetable oil in a large skillet over
high heat and add the potatoes and bell pepper. Cook for about 5
minutes, stirring occasionally. Add the scallions and cook an
additional 2 minutes. In a bowl beat the eggs and water and add the
hot sauce and cheese. Add this mixture to the potatoes and cook,
stirring frequently, about 5 minutes, until the eggs are set.
Meanwhile, wrap the tortillas in aluminum foil and heat in a 350F
(180C) oven for 10 minutes, or in a plastic bag in the microwave for
about 30 seconds. Divide the potato and egg mixture evenly between
the four tortillas and wrap burrito style. Makes four servings.
