You've got to try this deliciously different recipe. Served with a
simple salad on the side, it makes an interesting main dish that's
guaranteed to be requested again and again.
Shrimp Stuffing Au Gratin
from Campbell's Kitchen
Prep Time: 15 min.
Bake Time: 30 min.
4 1/2 cups Pepperidge FarmŪ Herb Seasoned Stuffing
3 tablespoons butter, melted
1 1/4 cups water
2 cups cooked broccoli florets
2 cups peeled, deveined cooked medium shrimp
1 can (10 3/4 ounces) Campbell'sŪ Condensed Cream of Mushroom Soup
(Regular *or* 98% Fat Free)
1/2 cup milk
2 tablespoons diced pimientos
1 cup shredded Swiss cheese (about 4 ounces)
1. Crush *1/2 cup* stuffing in a small bowl. Stir in *1 tablespoon* butter.
2. Stir the water and remaining butter in a medium bowl. Add the
remaining stuffing and mix lightly. Spoon the mixture into a 2-quart
shallow baking dish. Top with the broccoli and shrimp.
3. Stir the soup, milk, pimientos and cheese in a medium bowl. Pour the
soup mixture over all. Sprinkle with the crushed stuffing mixture.
4. Bake at 350°F. for 30 minutes or until the mixture is hot and bubbling.
Makes: 6 servings (about 1 1/3 cups each).

To quick-thaw frozen shrimp, place them in a colander and run
cool water over them until no longer frozen.
