If you're looking for a way to sneak vegetables into your kids' diets,
this mostaccioli is for you! Baked and oozing with cheese, your kids
will beg for seconds - yes, even with the zucchini!
3-Cheese Mostaccioli Bolognese
from Campbell's Kitchen
1 pound ground beef
2 cloves garlic, minced
1 medium zucchini, cut in half lengthwise and sliced (about 1 cup)
3 cups PregoŽ Traditional Italian Sauce * or* Organic Tomato & Basil
Italian Sauce
6 cups mostaccioli *or* tube-shaped pasta (ziti), cooked and drained
6 ounces shredded mozzarella cheese (about 1 1/2 cups)
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
1. Heat the oven to 400°F.
2. Cook the beef and garlic in a 12-inch skillet over medium-high heat
until the beef is well browned, stirring often to break up the meat.
Pour off any fat. Add the zucchini and cook until it's tender. Stir in
the sauce.
3. Stir the beef mixture, pasta, *1/2 cup* mozzarella cheese, ricotta
cheese and Parmesan cheese in a 3-quart shallow baking dish. Sprinkle
with the remaining mozzarella cheese.
4. Bake for 20 minutes or until the mixture is hot and bubbling and the
cheese is melted.
Makes: 6 servings (1 3/4 cups each).
Kitchen Clip
Mostaccioli (which means "little moustaches" in Italian) is a
tube-shaped pasta. If you can't find it, use penne, bow ties or
corkscrews instead.
