When you want familiar, satisfying flavors, you won't go wrong with this
skillet supper. Everyone in the family will leave the table well-fed and
happy after this dinner!
Skillet Garlic Chicken Dinner
from Campbell's Kitchen
Prep Time: 5 min.
Cook Time: 40 min.
Vegetable cooking spray
4 skinless, boneless chicken breast halves (about 1 pound)
2 cloves garlic, minced
1 3/4 cups SwansonŽ Chicken Stock
3/4 cup *uncooked* regular long-grain white rice
1 bag (16 ounces) frozen vegetable combination (broccoli, cauliflower,
carrots)
1/3 cup grated Parmesan cheese
Paprika
Spray a 12-inch skillet with the cooking spray and heat over medium-high
heat for 1 minute. Add the chicken and garlic and cook for 10 minutes or
until the chicken is well browned on both sides. Remove the chicken from
the skillet.
Stir the stock, rice and vegetables in the skillet and heat to a boil.
Reduce the heat to low. Cover and cook for 15 minutes. Stir in the cheese.
Return the chicken to the skillet. Sprinkle the chicken with the
paprika. Cover and cook for 10 minutes or until the chicken is cooked
through and the rice is tender.
/Note:/ SwansonŽ Seasoned Chicken Broth with Roasted Garlic is no longer
available. Campbell's Kitchen has modified this recipe with chicken
stock to deliver the same great dish you enjoyed.
Serves 4.

Freshly grated Parmesan, Asiago or Romano cheese would taste
great in this skillet. If you're grating from a wedge of cheese, don't
toss the rind when you're done. Instead, add it to the next pot of soup
you make for depth and flavor!
