using /Pepperidge FarmŽ/ Corn Bread Stuffing, delivers just that. This
is good eating!
Oven-Baked Catfish
from Campbell's Kitchen
Prep Time: 15 min.
Bake Time: 20 min.
1 cup Pepperidge FarmŽ Corn Bread Stuffing, crushed
1/2 tsp. paprika
4 fresh *or* thawed frozen catfish fillets (about 1 pound)
1 egg
2 tbsp. butter
Creamy ranch salad dressing *OR* chunky blue cheese salad dressing
Stir the stuffing and paprika on a plate. Beat the egg in a shallow
dish with a fork or whisk. Dip the fish into the egg. Coat the fish
with the stuffing mixture. Place the fish onto a baking sheet. Drizzle
the fish with the butter.
Bake at 400°F. for 20 minutes or until the fish flakes easily when
tested with a fork. Serve with the salad dressing for dipping.
Serves 4.
Kitchen Clip Make this a Cajun feast by adding cayenne pepper to
the egg wash. It'll give the fish plenty of kick.
