Moroccan Brisket with Onions & Apricots

Sweetness and spices enhance brisket's beefy flavor in this simple slow
cooker recipe. Here's a dish that's special enough to serve at Hanukkah
or any other holiday celebration you're planning this season.

Moroccan Brisket with Onions & Apricots
from Campbell's Kitchen

Prep Time: 10 min.
Cook Time: 7 hr.

2 large onions, cut into wedges
2 teaspoons ground coriander (optional)
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon garlic powder
1 boneless beef brisket (about 3 pounds)
1 cup dried apricots
1 3/4 cups SwansonŽ Beef Stock
2 tablespoons honey

1. Place the onions into a 6-quart slow cooker.

2. Stir the coriander, if desired, cumin, cinnamon and garlic powder in
a small bowl. Rub the mixture on the beef. Place the beef into
the cooker. Arrange the apricots around the beef.

3. Stir the stock and honey in a small bowl. Pour over the beef. Cover
and cook on LOW for 7 to 8 hours or until the beef is fork-tender.

/Time-Saving*:*/ The recipe may also be cooked on HIGH for 4 to 5 hours.
Makes: 8 servings.
